CHICKEN PASTA 
1 (16 oz.) box spaghetti noodles
1 cooked chicken breast, cubed

SAUCE:

1 tbsp. olive oil
2 tbsp. butter
2 cloves garlic, minced
1 3/4 cups milk (I use soy milk)
1 cup grated cheddar cheese
1 (10 oz.) box frozen spinach, thawed and squeezed
salt and pepper, to taste

Prepare the pasta as instructed on the box.

Heat the butter and the olive oil together in a saucepan on medium heat. After it gets hot add the garlic. Let it cook for about five minutes.

Add the milk to the pan and wait for it to simmer. After it simmers add the cheese and stir till it has melted.

Let the frozen spinach thaw. I spend the process by heating it up in the microwave for about a minute. Then squeeze the water from the spinach and add it to the sauce.

Add the chicken and the noodles to the sauce and enjoy!

Variation: May substitute cooked chicken breast for 1 (12 oz.) can premium chunk chicken, drained.
