QUICK COFFEE CAKE 
1 c. sifted Gold Medal flour
2 tbsp. baking powder
1/2 tsp. salt
1/2 tbsp. cinnamon
1 egg
1/2 c. sugar
1/2 c. milk
2 tbsp. melted butter or Crisco

Sift flour, baking powder, salt, and cinnamon together twice in a large bowl. Beat egg until thick. Add sugar, milk, and shortening; blend with mixer. Add egg mixture to flour mixture; stir quickly until flour mixture is moist. Pour batter into 8 or 9 inch greased pan. Bake at 375 degrees for 25 minutes.

Topping: 1 tablespoon of melted butter, 1/4 cup brown sugar, and 1/2 cup broken pecans. Mix all 3 together and spread over hot coffee cake. Serves 6.
