FUNNEL CAKES 
1 egg
1/4 tsp. salt
2/3 c. milk
3/4 tsp. baking powder
1 1/3 c. flour
3/4 tsp. baking soda
2 tbsp. sugar
1/2 tsp. flavoring (butter, almond, vanilla)

Combine all ingredients in a bowl. Beat until smooth. Pour part of batter into a clean funnel, holding finger over bottom of funnel. Drop batter into deep fat. Swirl into circles from center out. Make each circle 5-6 inches at the widest part.

Turn with tongs. Brown on both sides; drain on paper towel. Serve with a sprinkling of confectioners' sugar, jelly, syrup, molasses, or honey. Good with confectioners' sugar glaze. Makes about 12 cakes.
