BAKED SOLE 
3/4 c. butter
1 egg white
1 lb. sole fillets
25 saltine crackers, crushed (about 1/2 c.)
Dash of salt
Dash of pepper

Preheat oven to 400 degrees. Place butter in a 13 x 9 x 2 inch baking dish. Place in oven until butter melts and turns golden brown (do not burn).

Place egg white in a shallow dish. Beat with a fork until foamy; set aside.

Pat fish dry with paper towels. Dip fish in egg white, then dip in cracker crumbs to thoroughly coat. Place in browned butter in baking dish. Sprinkle with remaining cracker crumbs, salt and pepper.

Bake for 15-18 minutes or until fish flakes easily with a fork, basting every 5 minutes. Baste fish with all remaining butter in dish before serving. Serve with French fries, steamed carrots and cole slaw. Makes 4 servings.
