MINI CHEESE CAKES 
1 (8 oz.) pkg. cream cheese
1 egg
1/2 c. sugar
1 tsp. vanilla
12 "Nilla Wafers"

Place 1 "Nilla Wafer" in the bottom of each paper muffin liner (then inserted in muffin cup).

Mix all ingredients with mixer. Cover each "Nilla Wafer" with cream cheese mixture to half fill each muffin cup.

Bake at 375 degrees for 20 minutes. Let cool then top with your choice of pie fillings. Makes about one dozen.
