MINI CHEESE CAKES 
1 box vanilla wafers
1 box sm. foil cupcake liners
2 (8 oz.) cream cheese
2 eggs
1 tbsp. lemon juice
1 tsp. vanilla
3/4 c. sugar
1 can pie filling
Cool Whip

Mix cream cheese, eggs, lemon, vanilla and sugar until fluffy. Put wafer in bottom of liner in muffin tins. Top with 1 teaspoon of mixture. Bake at 375 degrees for 15 minutes. Cool and top with pie filling and Cool Whip.
