LITE MINI APPLE SPICE CAKES 
1/2 c. firmly packed brown sugar
1/4 c. reduced calorie butter, softened
1 tsp. vanilla
2 egg whites
2 c. all-purpose flour
2 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
2 tsp. ground cinnamon
1/4 tsp. ground nutmeg
2/3 c. nonfat buttermilk
1 c. finely chopped, unpeeled cooking apple
1/3 c. golden raisins
Vegetable cooking spray

Cream sugar and butter at medium speed of an electric mixer until and fluffy (about 5 minutes). Add vanilla and egg whites; beat at medium speed until well blended.

Combine flour and next 5 ingredients. With mixer running at low speed, add to creamed mixture alternately with buttermilk, beginning and ending with flour mixture. Stir in apple and raisins. Spoon evenly into two 5 3/4 x 3 1/4 x 2-inch aluminum foil loaf pans coated with cooking spray. Bake at 350 degrees for 50 minutes or until a wooden pick inserted in center comes out clean. Cool on a wire rack.
