LIZ'S BANANA AND CINNAMON PANCAKES | |
1 1/2 cups all-purpose flour 3 1/2 tsp. baking powder 1 tsp. salt 1 tbsp. cinnamon powder 1 tsp. sugar 1 1/4 cups milk 1 egg 3 tbsp. butter, melted 1 mashed banana In a large bowl, sift together flour, baking powder, salt, cinnamon and sugar. Next, slowly stir in the milk, egg and melted butter until smooth. Lastly, use a wooden spoon to stir in the mashed banana, then use an electronic or hand held whisk to blend for 2 minutes until smooth. Heat a lightly oiled pan and use approximately 3/4 cup of batter per pancake. Turn over when top is bubbling and edges are turning crisp. For best serving, add some freshly cut bananas to your plate and sprinkle some cinnamon on them. Submitted by: Elizabeth |
