BAKED CAULIFLOWER 
1 nice white head of cauliflower
2 eggs
1/2-1 c. grated cheese
2-3 tbsp. salt

Soak head of cauliflower in cold salt water for about 2 hours. Place head in kettle with about 1 cup water, cover and par boil for 10 to 15 minutes until tender. Do not over cook. Place in casserole and pour 2 beaten eggs over top. Cover with grated cheese (I use medium cheddar). Bake, covered at 375 degrees for 15 to 20 minutes. Serve on platter.
