ITALIAN POTATO BALLS 
1 1/2 lb. potatoes, peeled
2 egg yolks
1/2 c. grated Parmesan cheese
2 tbsp. finely chopped onion
2 tbsp. vegetable oil
1/4 c. finely chopped parsley
2 tsp. salt
1/2 tsp. black pepper
Flour
2 eggs, beaten
Bread crumbs
Oil

Boil potatoes in salted water until done. Mash and combine with egg yolks and cheese in a large bowl. Saute onion in 2 tablespoons oil until golden. Add to potato mixture along with parsley, salt and pepper. Stir until smooth; shape into small balls. Roll in flour, then in beaten egg sand then coat with bread crumbs. Chill until ready to fry. Fry in deep, hot (375 degrees) oil until golden brown. Makes 6 servings.
