OATMEAL LACE COOKIES 
1/2 c. butter
1 1/2 c. quick cooking rolled oats
1 egg
2/3 c. sugar
1 tsp. baking powder
1 tbsp. all-purpose flour
1 tbsp. grated orange rind

Melt butter in small pan and add rolled oats; stir until all oats are coated with butter. Beat egg until foamy. Add sugar and beat until light.

Add baking powder and flour to the egg mixture. Then mix in the oatmeal butter mixture. Stir in the orange rind. Grease and flour a cookie sheet. Drop batter, 1/2 tablespoon at a time about 3 inches apart on cookie sheet.

Bake at 350 degrees until golden, watch carefully. Allow to cool about 1 minute, then remove from cookie sheet onto cooling racks. Store in airtight tins or containers. makes 4 dozen cookies.

Preparation time: about 15 minutes. Oven temperature: 350 degrees. Baking time: 8 to 12 minutes for each sheet.
