ZUCCHINI PINEAPPLE BREAD 
3 eggs, beaten
1 c. sugar
1 c. oil
3 c. flour
2 tsp. baking soda
1/2 tsp. baking powder
1 tsp. salt
2 tsp. cinnamon
3/4 tsp. nutmeg
2 tsp. vanilla
2 c. coarsely grated zucchini (raw & unpeeled)
1 c. nuts, optional
1 can (8 3/4 oz.) crushed pineapple, drained

Combine eggs and sugar. Gradually add oil to egg mixture. Sift together flour, baking soda, baking powder, salt, cinnamon and nutmeg. Blend into egg mixture. Add vanilla, nuts, zucchini and pineapple until mixed. Pour into 2 greased and floured loaf pans. Bake at 350 degrees for 70 minutes.
