PINEAPPLE ZUCCHINI BREAD 
3 eggs
1 c. vegetable oil
2 c. sugar
1 tsp. salt
3 tsp. cinnamon
1 1/4 tsp. baking soda
1/2 tsp. baking powder
3 tsp. vanilla
1 (8 oz.) can drained crushed pineapple
2 c. grated zucchini
3 c. flour
1 c. nuts
Optional: 1/2 c. coconut 1/2 c. raisins 1/2 c. granola or toasted wheat germ
For Christmas: 1 c. candied fruit

Beat eggs, oil and sugar. Stir in salt, cinnamon, soda, baking powder and vanilla. Add well drained pineapple, 1 1/2 cups flour and stir well. Add zucchini; stir. Then add remaining flour. Stir in nuts, coconut, raisins, etc. and pour into well greased and floured loaf pans. Bake at 350 degrees for 45-60 minutes. Makes 2 regular or 4 small loaves. (Let cool 5-10 minutes in pan before removing.)
