ZUCCHINI PINEAPPLE BREAD 
3 eggs, beaten
2 c. sugar
1 c. oil
3 c. flour
2 tsp. baking soda
1/2 tsp. baking powder
3/4 tsp. nutmeg (optional)
1 tsp. salt
1-2 tsp. cinnamon
2-3 tsp. vanilla
2 c. coarsely grated zucchini (raw and unpeeled)
1 c. nuts (optional)
1 can (8 3/4 oz.) crushed pineapple (drained well)

Combine eggs and sugar. Add oil gradually to egg mixture. Sift together flour, baking powder, baking soda, salt, cinnamon and nutmeg. Add to egg mixture and blend. Add vanilla, nuts, zucchini and pineapple. Mix well.

Pour into two greased and floured bread pans. Bake at 350 degrees for approximately 1 hour and 10 minutes.
