SPICY PINEAPPLE ZUCCHINI BREAD 
3 eggs
1 c. salad oil
2 c. sugar
2 c. shredded zucchini
1 c. crushed pineapple, well drained
2 tsp. baking soda
1 tsp. salt
1/2 tsp. baking powder
1 1/2 tsp. cinnamon
3/4 tsp. nutmeg
3 c. flour
1 c. finely chopped nuts
1 c. coconut or raisins; optional

Beat together until thick and foamy: eggs, salad oil, sugar, and vanilla.

Stir in zucchini and pineapple. Combine flour, soda, salt, baking powder, cinnamon, nutmeg, nuts, and raisins or coconut. Stir gently into first mixture until just blended.

Bake in two greased and floured loaf pans at 350 degrees for 1 hour.

Cool 10 minutes and turn out on wire rack to finish cooling.
