ZUCCHINI PINEAPPLE LOAF 
3 eggs
1 1/2 c. sugar
1 tsp. vanilla
3/4 c. vegetable oil
2 c. zucchini
3 c. flour
1 1/2 tsp. baking powder
2 tsp. baking soda
1/2 tsp. salt
1 tsp. cinnamon
3/4 tsp. nutmeg
1 c. walnuts
1 c. crushed pineapple, drained

Beat eggs until fluffy, add sugar, vanilla, oil, unpared zucchini. Stir flour, baking soda, baking powder, salt, cinnamon, nutmeg, add to egg mixture. Mix well. Add nuts and pineapple. Bake at 325 degrees for 1 hour.
