ZUCCHINI WALNUT LOAF 
3 eggs
2 c. sugar
1 tsp. baking soda
1 c. vegetable oil
1 c. grated zucchini
1/2 tsp. salt
2 tsp. vanilla
2 tsp. cinnamon
2 c. flour
1/2 tsp. baking powder
1 c. lg. walnut pieces
1/2 c. raisins (opt.)

Mix eggs, sugar, oil, vanilla and zucchini with electric mixer until well blended. Sift together flour, salt, soda, powder and cinnamon. Then add to egg mixture and blend. Stir in walnuts. Pour into greased and floured loaf pan. Bake in preheated 325 degree oven for 1 hour or until cake tester comes out clean.
