BLUEBERRY LOAF WITH WALNUTS
2 tsp. butter
2 c. sifted all-purpose flour
1 1/4 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1/4 tsp. cinnamon
1/4 tsp. nutmeg
3/4 c. chopped walnuts
7 tbsp. butter, softened
3/4 c. granulated sugar
1 egg, at room temperature
1 tsp. vanilla extract
3/4 c. milk
2/3 c. blueberries, washed and dried thoroughly
2 tbsp. granulated sugar mixed with 1/4 tsp. cinnamon

Smear 2 teaspoons butter on the inside of a 9x5x3 inch loaf pan and dust with a little flour. Set aside.

Onto a sheet of wax paper, sift together the flour, baking powder, baking soda, salt, cinnamon and nutmeg. In a small bowl, toss nuts in 1 tablespoon of the mixture.

Cream butter until light; beat in sugar in 3 additions until very fluffy. Add egg and continue to beat for 1 minute. Blend in vanilla. Add sifted mixture alternately with milk in 3 additions, beating after each until flour is absorbed. Fold in berries and nuts.

Carefully turn batter into prepared pan and sprinkle cinnamon-sugar evenly over top. Bake in a preheated 350 degree oven for 1 hour or until done. Cool loaf in the pan for 10 minutes, then remove and cool on rack.
