CREAM OF BROCCOLI SOUP 
2 tbsp. butter
1 onion, chopped (about 1/2 c.)
1/2 c. green pepper, chopped
2 c. broccoli, chopped
1 1/4 c. chicken stock
1/2 tsp. salt or to taste
1/2 c. milk
1/2 tsp. basil
1/2 c. broccoli flowerets
1/4 c. sour cream

Saute onion in butter until transparent. Add green pepper, chopped broccoli, chicken stock and salt. Cook about 10 minutes, until broccoli is tender. Place mixture in blender and puree with milk until mixture is smooth. Pour into pan, add basil and heat until hot, stirring constantly. Cook broccoli flowerets until just done. Add the flowerets and sour cream to hot soup and mix completely. Serve immediately. Serves 4.
