ZUCCHINI MUFFINS 
3 eggs, beaten
1 c. oil
1 tbsp. vanilla
2 c. shredded, unpeeled zucchini (about 2 medium size)
1 1/2 c. sugar
2 c. unsifted all-purpose flour
1 tbsp. cinnamon
1 1/2 tsp. baking soda
1 1/4 tsp. salt
1/4 tsp. baking powder
1 c. chopped nuts

Combine eggs, oil, vanilla and zucchini. Add and stir until moistened sugar, flour, cinnamon, soda, salt, baking powder and chopped nuts. Grease muffin tins. Fill 2/3 full.

Bake in preheated 400°F oven for 18 minutes.
