SCRAMBLED EGG CASSEROLE | |
1 lb. bacon, diced & fried crisp, drain 2 (4 oz.) cans mushroom pieces, drained 1 green pepper, chopped & sauteed Scramble 2 dozen eggs in butter. Do not add milk. Butter 9 x 13 inch casserole. Layer eggs, bacon, mushrooms and pepper. Cover with thin slices of Velveeta cheese. Then place a second layer of each on top of first layer. Cover with cheese slices. Prepare night before and refrigerate, covered with foil. Bake at 350 degrees for 45 minutes to 1 hour. Leave foil on while baking, remove for last 20 minutes. Serves 12. |
