PARSLEY RED SKIN POTATOES 
2 1/2 lb. red skin potatoes
3 tbsp. butter
1 tbsp. chopped fresh parsley
1/4 tsp. salt (optional)
1/8 tsp. pepper

Pare a strip from the center of each potato. Heat 1 inch water (salted if desired) to boiling in 3 quart saucepan; add potatoes. Cover and heat to boiling; reduce heat. Cook 20-30 minutes or until tender; drain. Heat butter until melted. Stir in remaining ingredients. Pour over potatoes; stir gently. Serves 4.
