LIGHT DILLED - POTATO SALAD 
4 lbs. potatoes
2 tbsp. corn oil
2 tbsp. apple cider vinegar
1 c. mayonnaise
1 c. plain yogurt
1 tbsp. Dijon mustard
1 c. minced red onion
1/2 c. fresh dill weed or 1/4 c. dried dill
Salt & pepper to taste

Cook and drain potatoes. Slice potatoes and sprinkle with oil and vinegar. Combine remaining ingredients for dressing and add to potatoes.
