REUBEN CASSEROLE 
32 oz. can sauerkraut, drained
1/2 c. onion, chopped
1/2 c. parsley
2 tsp. caraway seed
4 c. shredded Swiss cheese (or 16 slices)
1 1/2 c. Thousand Island dressing
1 lb. corned beef
6 slices rye or wheat bread, cubed
1/2 c. melted butter

Combine sauerkraut, onion, parsley, and caraway seed in bottom of 9 x 13 inch pan. Top with half of cheese, 2/3 cup dressing, and corned beef. Top with remaining dressing and cheese. Melt butter and toss with bread cubes. Sprinkle on top. Bake at 375 degrees for 35 minutes.
