ZUCCHINI MUFFINS 
3 c. flour
1 tsp. baking soda
1 tsp. baking powder
1 tsp. salt
1 tsp. cinnamon
1/2 c. raisins
1 c. chopped nuts
2 c. sugar
4 eggs
1 c. oil
2 c. grated zucchini
1 tsp. vanilla or almond flavoring

Preheat oven to 350 degrees. Sift dry ingredients together and set aside. Combine sugar and eggs in large bowl. Gradually add the oil in a slow steady stream, beating constantly. Add the zucchini and vanilla; blend well. Stir in nuts and raisins. Fold in dry ingredients until batter is evenly moist.

Fill lined muffin pans 3/4 full. Bake 25 minutes. Top with melted butter and sprinkle with sugar while still warm. Makes 2 1/2-3 dozen.
