ZUCCHINI MUFFINS 
2 1/2 c. flour
1 1/2 c. sugar
1 c. pecans (nuts)
1/2 c. oatmeal
1 tsp. baking powder
1 tsp. salt (optional)
1 tsp. cinnamon
4 eggs
3/4 c. oil
10 oz. zucchini, shredded

Measure first 7 ingredients in bowl. Add eggs, oil, zucchini. Mix in with dry ingredients. Put paper liners in tins and fill 2/3 full. Bake at 400 degrees for 25 minutes. Makes 1 1/2 dozen. Freezes nicely.
