ZUCCHINI MUFFINS 
2 1/2 c. flour
1 c. chopped pecans
1 1/2 c. sugar
1 tbsp. baking powder
1 tsp. salt
1 tsp. cinnamon
4 eggs, beaten
3/4 c. oil
1 med. to lg. zucchini (shredded 3 cups)
1/2 c. uncooked oats

Mix together flour, pecans, sugar, baking powder, salt and cinnamon. Combine the eggs, oil, and zucchini. Pour this into the flour mixture and add the oats. The batter will be lumpy. Put into a greased muffin pan. Bake 20 minutes at 400 degrees. Serves 12.
