FRESH MINT SAUCE 
1 c. sugar
1 c. hot water
1/2 c. mint leaves
1/4 c. light corn syrup
4 drops green food coloring

In 8 cups measure, combine sugar and water. Mix well, add mint. Microwave on High for 5 minutes or until boiling. Boil for 1 minute. Strain mixture and discard leaves. Add corn syrup and food coloring. Chill 4 hours. Serve over ice cream or as dressing for fruit salad.

Since microwave ovens vary in power, you may need to adjust your cooking time.
