FRESH PINEAPPLE CUP 
4 c. fresh pineapple wedges
1/4 c. fresh lemon juice
1/2 c. sugar
fresh mint for garnish

Combine pineapple wedges, lemon juice and sugar. Chill 3 to 4 hours or overnight. Serve in sherbet glasses as an appetizer or for dessert, topping each with a sprig of fresh mint.

Makes 6 to 8 servings.
