FRESH PINEAPPLE AND AVOCADO
SALAD
 
1 ripe avocado
4 slices fresh pineapple
2 tbsp. light extra virgin olive oil, sunflower or peanut oil
2 tsp. fresh lime or lemon juice
1/4 tsp. salt
1/2 tsp. sugar
Lettuce or other salad greens

Chill the avocado and pineapple. Remove the peel and pit from the avocado. Cut into 1/2-inch cubes. Peel and cut the pineapple into wedges. Add them to the avocado. Combine the oil, lime or lemon juice, salt, and sugar. Add to fruit and toss lightly.

Serve on lettuce or other salad greens.
