SHRIMP DISH 
2 big onions, diced
3 or 4 stalks celery, diced
2 sm. cans mushrooms, drained (reserve juice)
2 cans French style string beans, drained
1 1/2 c. rice (boiled in 3 c. water, 2 tbsp. oil, 1 1/2 tsp. salt)
1 lb. fresh shrimp or 1 lb. cut-up chicken cutlets into bite-size pieces

Cook rice and put aside. Saute onions and celery in 2-3 teaspoon oil or more, if necessary, until tender, 5 minutes. Add the mushrooms and the string beans. Stir into mushroom and onion mixture, the shrimp or chicken. Cook, stirring often, for 5-7 minutes. Combine with rice and serve.

VARIATION: Add some of mushroom juice to onion, celery, shrimp mixture and serve with rice on the side.
