CARROT CAKE 
2 c. sugar
4 eggs, beaten
2 c. flour
2 tsp. baking soda
Salt
3 tsp. cinnamon
1 1/2 c. oil
1 baby size carrots
1 junior size carrots
1/2 c. water

Mix all ingredients together. Bake at 350 degrees for 35 minutes in 9x13 inch pan. Cool. Frost with Cream Cheese Frosting.

CUSTARD FROSTING:

1/2 c. sugar
4 tbsp. flour
1/2 c. milk
1 egg
1/2 c. butter
1 tsp. vanilla
4-8 tbsp. powdered sugar

Mix sugar and flour. Add milk, and egg; cook until thick. Cool and add butter, vanilla, and powdered sugar.
