EGG AND HASH BROWN BAKE 
12 oz. hash browns
5 eggs
6 slices bacon, cooked and diced
1/2 c. cottage cheese
1 c. shredded Jack or Mozzarella cheese
1 green onion
1 tsp. salt
1/8 tsp. pepper
paprika
4 drops hot pepper sauce (optional)

Pour hot water over hash browns to thaw. Beat eggs slightly. Stir in with eggs, cheese, onion and seasonings. Butter 10-inch pie plate or 8x8-inch dish. Layer hash browns, egg mixture, then bacon. Garnish with paprika. Bake from cold oven 30 minutes at 350°F or cover with plastic, refrigerate and bake later (or next day) from cold oven (350°F) for 40 minutes.
