COTTAGE CHEESE SALAD 
16 oz. sm. curd cottage cheese
3 oz. pkg. orange jello
1 can mandarin oranges, drained
9 oz. Cool Whip
1/2 c. coconut, optional

Spread dry jello over cottage cheese; mix. Add oranges, Cool Whip, and coconut; mix and refrigerate. May be made ahead of time and stored in refrigerator. This may also be made using lime jello and crushed pineapple, drained, or strawberry jello and frozen strawberries, thawed and drained.
