HERMAN - GOOD SAMARITAN
COFFEECAKE
 
1 c. starter
1 1/2 tsp. baking powder
3 lg. eggs
1 tsp. vanilla
1/2 c. buttermilk
1/4 lb. butter, melted
1/4 tsp. salt
1 tsp. orange extract
1/2 tsp. baking soda
1 c. sugar
2 c. flour
1/4 tsp. nutmeg
1 c. chopped walnuts or
1 c. flour dusted raisins

Beat all ingredients together as listed above, beating 6 minutes with addition of last ingredient. Divide batter between two 9 inch greased foil cake pans placed on a cookie sheet positioned on center rack of own. Bake at 350 degrees for 30-35 minutes or until browned. Pierce each cake 25 or 30 times with a toothpick and drizzle with thinned vanilla icing while hot from the oven.

Then spread each cake with 2 tablespoons of orange marmalade or pineapple preserves. Sprinkle the top with shredded coconut and place a thin slice of orange in the center for garnish. Wrap in foil and take to a friend along with a cup of Herman and the directions, for adding to the starter.
