CHICKEN WITH RICE 
1 1/2 to 2 lbs. chicken, boneless
1 med. onion, finely chopped
3 whole garlic cloves, chopped, (or 2 tsp. powdered garlic)
3/4 tsp. oregano
1/8 tsp. hot sauce
2 tbsp. lemon juice
1 tsp. season salt
1/2 tbsp. salt (just to taste)
2 tbsp. oil
1/2 (6.5 oz.) can tomato paste
2 tbsp. Spanish olives, (optional)
2 tbsp. green pepper, finely chopped, (optional)
2 1/2 c. uncooked rice
3 1/2 c. water

Mix meat with first 7 ingredients. Heat oil in large saucepan. Place chicken in the pan and cook until meat is half done, about 20 minutes. Stir occasionally. Add tomato paste, green pepper, olives, and water, bring to a boil. Add rice and stir. Let boil until most of the water evaporates, (holes will begin to appear in the rice). cover and simmer on very low heat for about 20 minutes. Stir then serve. Serves 6 adults.
