CHICKEN PILAF 
1 box original rice pilaf (Near East Brand)
2 boneless chicken breasts
Mild cheddar cheese
1 med. to lg. tomato
1 lg. lemon
1 lg. Spanish onion

Cook rice by directions; add some cheese to rice when cooked. Put in 8 x 8 pan. Place meat on rice mixture; top meat with one slice of each of tomato, onion, and lemon; top with some additional cheese. Bake at 350-375 degrees for 30-40 minutes or until meat is flaky.

Can be doubled in 9 x 13 pan.

Can substitute fish for chicken.
