BASIC MEAT SAUCE 
2 lbs. lean ground beef
2 med. onions, diced
2 c. chopped celery
1 lg. green pepper, chopped
3 tbsp. salad oil
3 (15 oz.) cans tomato sauce
1 (6 oz.) can tomato paste
1/4 lb. mushrooms, washed and sliced
2 cloves garlic, minced
1/2 tsp. Italian seasoning
1/4 tsp. seasoning salt
1/4 tsp. oregano
1/4 tsp. paprika

In large skillet, saute onions, celery, green pepper, and garlic in salad oil until clear and somewhat golden in color.

In Dutch oven, brown ground beef well; drain off excess grease. Add sauteed mixture, seasonings, tomato sauce, tomato paste, and mushrooms. Simmer over low heat for 20-30 minutes, stirring occasionally. Serve over cooked pasta, or use in lasagna or chili.
