PEACHY PARFAITS 
1 env. unflavored gelatin
1 1/4 c. buttermilk
1 tbsp. lemon juice
1/2 c. sugar
3/4 tsp. almond extract
Yellow food coloring
3 peaches, sliced

Soften gelatin in 1/4 cup cold water in saucepan. Place over low heat; stir until gelatin is dissolved. Remove from heat; add buttermilk, lemon juice, sugar, almond extract and several drops of food coloring. Chill until mixture is consistency of unbeaten egg whites. Layer gelatin mixture and peaches in 3 tall glasses, using about 2/3 cup gelatin mixture in each glass. Chill until firm. Serves 3.
