CHICKEN WINGS IN SHERRY SAUCE 
15-20 chicken wings
4 scallion stalks
1/2 c. soy sauce
1/2 c. cooking sherry
1 c. water
2-4 tbsp. brown sugar

Simmer chicken wings in sauce mixture, covered, for about 1/2 hour. Uncover and simmer for 15 minutes more. Serve either hot or cold. Preferable to cook a day in advance.
