CABBAGE AND BEEF CASSEROLE | |
1 lb. ground beef 1 c. chopped onion 1 med. head cabbage, shredded 1/2 c. uncooked rice 1 can tomato soup 1 can water 3 tbsp. sugar 1 tbsp. vinegar Salt to taste Brown ground beef with chopped onion until beef loses its red color and onion is transparent. When beef is brown, stir in raw rice. While the beef is cooking, shred the cabbage, cutting it more coarsely than for slaw. Place in a greased baking dish or shallow casserole. Place beef mixture in a layer over shredded cabbage. Mix soup, water, sugar and vinegar and pour over beef and cabbage layers. Cover with lid or foil and bake at 350 degrees for 1 hour. Serves 4. |
