APPLE MUFFINS 
2 unpeeled apples, chopped
1/2 c. honey or brown sugar
1 egg, beaten
1/4 c. oil or melted butter
1 3/4 c. whole wheat or unbleached flour
1/2 to 1 tsp. cinnamon
1/2 tsp. salt
2 tsp. baking powder
1/4 c. wheat germ

Or increase regular flour to 2 cups.

Mix all ingredients just to moisten, add chopped apples last. Bake in greased muffin cups at 375 degrees for 15 to 20 minutes. Makes 12 to 16 muffins.
