ROSE'S APPLE MUFFINS 
1 c. whole wheat flour
2 tsp. baking powder
1/2 tsp. salt
1/2 tsp. allspice
1/2 tsp. nutmeg
1 tsp. cinnamon
1 c. unprocessed bran(
1/2 c. raw or toasted wheat germ
1/2 c. non-instant powdered milk (optional)
1 c. honey
1 c. salad oil
4 eggs
1 tsp. vanilla
2 lg. apples, peeled, cored and grated
1 c. chopped nuts (optional)

Available at health food stores.

Preheat oven to 400 degrees. Sift flour with baking powder, salt and spices into a large bowl. Stir in remaining dry ingredients. Combine honey, oil, eggs and vanilla, beating well. Make a well in center of flour mixture and add liquid mixture all at once, stirring only until flour mixture is moistened.

Add apples and nuts if desired. Pour into lightly greased 3-inch muffin tins and bake 12-15 minutes, or until tops are nicely browned. Remove from tins and let cool slightly on wire rack. Serve hot or freeze for future use. Makes about 2 dozen.
