SPICY APPLE MUFFINS 
2 c. sifted flour
1 1/2 tsp. ground cinnamon
1/2 tsp. ground allspice
1/2 c. apple juice concentrate, undiluted and unsweetened
1/2 c. raisins (optional)
2 tbsp. canola oil
12 packets Equal
2 tsp. baking powder
2 c. grated unpeeled apples
2 egg replacers

In large bowl, mix flour, Equal, cinnamon, baking powder and allspice. Set aside.

In another bowl, combine apples, apple juice concentrate, raisins, eggs and oil. Make a well in the center of dry ingredients and add apple mixture. Mix until dry ingredients are just moistened. Line muffin tins with paper liners. Spoon batter into paper-lined muffin cups. Bake at 350 degrees for 20-25 minutes. Makes 12.
