OAT BRAN APPLE MUFFINS | |
3/4 c. oat bran 1/2 c. whole wheat flour 1/2 c. whole bran cereal 1/4 c. packed brown sugar 2 1/2 tsp. baking powder 1/2 tsp. ground cinnamon 1/4 tsp. salt 1 beaten egg 3/4 c. skim milk 3 tbsp. cooking oil 1 sm. apple, finely chopped (about 1/2 c.) 1/2 c. raisins 2 tbsp. granulated sugar 1 tbsp. all-purpose flour 1 tsp. butter, melted 1/4 tsp. ground cinnamon In large bowl, stir together oat bran, the 1/2 cup flour, cereal, brown sugar, baking powder, the 1/2 teaspoon cinnamon and salt. Make a well in the center. In small mixing bowl, combine egg, milk and oil. Add to flour mixture. Stir until just moistened. Batter should be lumpy. Fold in apples and raisins. Grease muffin cups or line with paper cups and fill 2/3 full. In a small bowl, stir together the granulated sugar, the tablespoon of flour, the butter and the 1/4 teaspoon of cinnamon. Sprinkle over muffins. Bake at 400 degrees for 12 minutes or until golden brown. Makes 12 muffins. 132 calories; 5 grams fat, 23 milligram cholesterol per serving. |
