APPLE BRAN MUFFINS 
1 1/4 cups whole-wheat flour
1 cup oat bran (Quaker or Bob's Red Mill)
1/3 cup packed brown sugar
2 1/2 tsp. baking powder
1/4 tsp. baking soda
1/4 tsp. salt
1/4 tsp. ground nutmeg
1/4 tsp. ground cinnamon
1 cup buttermilk
2 egg whites
2 tbsp. vegetable oil
3/4 cup shredded, peeled apples

Preheat oven to 375°F. Spray muffins cups with non-stick cooking spray (Pam).

Mix flour, oat bran, brown sugar, baking powder, baking soda, salt, nutmeg and cinnamon.

In another bowl mix buttermilk, egg whites and oil; add to dry ingredients. Stir until dry ingredients are moistened; add apples.

Put about 1/4 cup batter into each muffin cup.

Bake at 375°F for 18 to 20 minutes (a toothpick inserted near center should come out clean).

Makes 12 muffins (1 muffin per serving).

Per Serving: 124 calories; 3 g. fat; 1 mg. cholesterol; 162 mg. sodium.
