APPLE NUT MUFFINS 
1 1/4 c. white flour
1/2 c. whole wheat flour
2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1/2 tsp. cinnamon
1/4 c. butter
2/3 c. brown sugar
2 lg. eggs
1 c. milk
1 lg. apple, peeled and chopped (1 c.)
1/2 c. walnuts, chopped

Heat oven to 400 degrees. Grease two 2 1/2 inch muffin pan cups. Mix flours with other dry ingredients. Using an electric mixer, cream butter and brown sugar in second bowl until fluffy. Beat eggs and blend well, then add milk. Stir mixture into flour mixture until just blended. Quickly fold in apples and nuts. Spoon batter into prepared muffin pan cup, filling each to the top. Bake 18 to 20 minutes until lightly browned and sharp knife comes out clean. Makes 12 muffins. 213 calories each.
