CARROT HONEY CAKE 
4 eggs
1/4 c. oil
1 c. honey
2 c. grated carrots
2 c. unbleached flour
2 tsp. baking soda
1 tsp. salt
2 tsp. cinnamon

Beat together oil, eggs, and honey. Add grated carrots. Sift together dry ingredients; fold in until well mixed.

Pour batter into well-greased 12 x 8 baking dish or 2 (9-inch) round layer pans. Bake in preheated oven at 350 degrees for 30-35 minutes. Sprinkle with confectioners sugar before serving.
