FROSTED CARROT - HONEY CAKE 
2 c. flour
2 tsp. baking soda
1/2 tsp. salt
2 tsp. cinnamon
1/4 c. oil
1 1/2 c. honey
4 eggs
1 lb. carrots, pared & cut in 1/2" pieces

Sift together dry ingredients. Process oil and honey in food processor until mixed. Process carrot pieces until fine. Pour into large bowl. Add flour mixture. Fold in until well mixed. Pour into two 8 inch layer pans which have been greased and floured. Bake at 350 degrees for 35 minutes. Remove from pan and cool on racks. May be frosted with chocolate or cream cheese frosting.

CREAM CHEESE FROSTING:

8 oz. cream cheese
1 stick butter, softened

Cream together. Add 3 cups powdered sugar and 1 tablespoon sherry or vanilla. Beat together until fluffy. One tablespoon orange juice and 1 teaspoon orange peel can be substituted for vanilla.
