POTATO STICKS | |
6 lg. baking potatoes 1/4 c. oil 1/4 c. butter Salt Peel potatoes and cut into 3/16-inch thick round slices. Cut slices into 3/16- inch sticks. Soak sticks in ice water until ready to cook. Dry well with paper towels. Heat oil and butter together until hot (not smoking). Fry potato sticks, a few at a time, until browned on all sides, stirring and turning when necessary. Salt. |
